Our Weekend, Week 2 (plus week 1 catchup)

We’ll start at the beginning…of the new year!

2016 started with a very tired and lazy day for us, as it usually is the day after New Year’s. You can read about why we were tired and our plans for NYE here. We had a great evening, and my dad was with us in Sweden for a few more days, which meant more freezing temperatures and another frozen ride for him! We also played boule at Boulebar in town (on Saturday 2nd) and then ate some French cuisine there after we had played. Sofi won both games, well done to her! 😀 Unfortunately we then had to go home and it was so cold! We ended up squatting on the bench at the bus stop so our feet weren’t on the ground and our ankles weren’t getting a chilling wind on them!

I finally got my saddle for my new bike, so my dad and I took some pictures of that one day while Sofi was meeting her friend Alex who has now moved to Brussels.

After my dad left, on Epiphany I went for a long ride in -12°C! It was organised by Komet Club Rouleur (the guys who do the Thursday sprint sessions we do in the summer), and the plan was to do 120 km, but I knew that was daft when it was so cold, so I turned back early and did 70 km total. It wasn’t as bad as I had expected, but I was glad to not have been out any longer as well!

After that, Sofi and I both started back at work on the 7th, for two days before the weekend. On the Friday it snowed a lot though, and I was hoping it would snow overnight as well so I could have a snowy ride, and a snowy ride I had! I rode for 40 km in the snow in the forest. It was -5°C and there was a LOT of snow. It was really fun, especially on my cyclocross bike (I had used my mountain bike in the snow previously). 😀

On the Sunday, Sam and Caroline dropped Leo off on their way to Norway to ski. We were going to have him all week!!! I was wanting to have another ride, but I felt a little bit unwell…not sure if it was similar to what Sofi had or because I had been out in the cold for too long the past few days. So it was a day spent working and wrapped up on the sofa for all three of us, which Leo particularly liked!

During the beginning of the week, the temperature started to rise, causing the snow to melt, but by the middle of the week it was getting much colder again and we even got new snow. So it was nice to see the shift from white to green to white again. The temperature was consistently cold during the nights though, and now the water in the harbour has frozen and you are able to walk (and skate) on it!

During the week, we made a delicious Spinach and Ricotta tortellini, and we will post the recipe this week! 😀

So, finally at the weekend of week 2! Friday was our last day with Leo, and we love looking after him because he is easily the best, sweetest, most well-behaved dog ever! Sam and Caroline were coming back from Norway in the afternoon/evening, so we offered to cook them dinner for when they came to collect Leo. We made our delicious Vietnamese Bun Cha with sticky tofu, and they loved it as much as we did. We weren’t sure what to make because we thought they could be starving but at the same time they might have gone to a fast food restaurant on the way back so might not want something too heavy. So we went for something that is both light and filling! 🙂

For dessert we had ice cream and made a warm raspberry sauce to have on top of the ice cream with some chocolate pieces and crushed cashews. Delicious!

On Saturday, Caroline and Leo were competing in an agility competition, and we said we wanted to come and watch (and support them). So we went with them in the morning and stayed until after Leo’s run. It was amazing watching all these dogs (and their owners) compete. There were dogs of all sizes, and some of varying degree of ability. Leo came second in the first competition (he was joint first on point because he had no faults, but was second based on time). 🙂 In his second competition, he was unfortunate to jump over one obstacle the wrong way, causing him to fail. (The dogs run out of a tunnel towards the obstacle, but are supposed to go around it and then jump over it from the other side and enter the tunnel again.) He did so well otherwise though and was very quick – it would have certainly been another podium for him were it not for that 😦 Caroline clearly is a dog expert – Leo really is well trained! 😀

After we got back, we made a butterscotch tart to take round to Malin and Evan’s for dinner. I also did a 45 min high-cadence session on the rollers, because I was finally feeling better again. (I also did a session on Friday before we started cooking.) Malin and Evan had prepared a delicious Moroccan meal for us, with spiced rice (with sultanas), chick pea balls, and two sauces. Yum! We then had the butterscotch tart for dessert with some vanilla quark on the side.

Yesterday (Sunday), Sofi finally trained for the first time this year as well! She had been feeling better on Thursday/Friday, but I told her to wait a couple more days just to be certain. We did a tough Sufferfest session (me on the rollers, her on the turbo trainer), and then Sofi went out for fika with her friend Sanna. I stayed at home where it was warm – it was -12°C again yesterday!

For dinner, we made a delicious leek and cauliflower pasta bake we had been meaning to make for aaaages from a Jamie Oliver magazine we bought last January (the same one that had the original Bun Cha recipe actually!). It was absolutely delicious and we made enough so that it would last us a few days because I was meant to be at a meeting with my cycling club tonight and will be out at meetings on Wednesday and Thursday with the cycling club as well. We will definitely post this recipe next time we make it, because although there are a few different elements to prepare before baking, the flavours and textures are well worth the effort!

We booked some flights to go and see Sofi’s friend Alex in Brussels for April, to coincide with the Tour of Flanders! Our spring is certainly looking very busy…

Tonight we went for a walk along the river and had a little fika before coming back to dinner and writing our blog posts. We are both exercising tomorrow morning: Sofi will run and I will cycle, and then we will both do a short circuits session. Hopefully we can stay fit and healthy again now and get back to regular training and delicious food!

Summer is here!

Summer is here and we will try to do some more blogging 🙂

Unfortunately we have had another long pause. I guess the past month has been too busy and we have not had the time to write as much as we would have liked. We have still been cooking though, but when there is less time our dishes become less extravagant 😉

So, a short recap of what we have been up to might be good. I (Sofi) have just finished work for the summer. I work as a teacher and now I have a whole long summer vacation to look forward to 🙂 Jason has to work for a few more weeks but then we are going on a long holiday together. We will go to England first for a few days and then we are off to Korea with my sister and her boyfriend. They are joining us for the first part of our holiday. We are going to Seoul first and then will travel to both Busan and Jeju. We hope that we can share some exciting food experiences when we are there. It truly is a different type of cuisine than what we are used to.

We went to Korea 2 years ago together and after coming back we both felt like there was so much more to see. So we are really looking forward to going back 🙂 If you are curious about Korea we think you should keep reading the blog and we will share our experiences.

The past few weeks have been a lot about exercising. The week after we came back from Italy we ran the Gothenburg Half Marathon. I found it really tough, much tougher than I expected it to be. I have run the distance only once before. I enjoyed the experience and I will definitely run it again next year. Jason is a bit more uncertain because he felt it took too much time to train for it and he wants to focus more on his cycling.

The weekend after Jason’s sister Jasmine was here to visit us. The whole weekend was spent cycling 🙂 We are all doing the Ride London-Surrey 100 in August. Jason has cycled it twice and I did it last year, although a shorter distance due to heavy rain. The ride is 160 km and starts in London. You then cycle around Surrey and finish at the Buckingham Palace. It was a great ride and I am really looking forward to cycling it again.

On Friday we cycled to Kullavik. The weather was perfect and it was nice to show Jasmine one of the places we really like cycling to. On Saturday we went to a hill in Gothenburg to do some hill repeats, and then had a nice gluten-free dinner and face masks!

Jasmine is gluten intolerant so we also made some gluten-free bars that we could take on the ride on Sunday. On Sunday we went for a long ride, 100 km in the wind. We cycled north and had a nice stop for coffee and sandwiches (gluten-free in Jasmine’s case, of course).

The week after Jason took part in a cycling race here in Gothenburg. He has wanted to start racing and this year he will try to participate in a few races. He raced in the sports class. I went to watch and got to see him finish second, so proud 🙂 ❤
DSC07347gokart2IMG_20150608_220434Last weekend my friend Linnea came to visit us for the weekend. We have been friends for a long time and met my first year at university. That was a long time ago, 12 years to be exact 🙂 We have not lived in the same place for many years but we are still as close friends as we have always been. We just spent the weekend hanging out with our other friend Alexandra, eating and drinking.

This weekend is the midsummer weekend in Sweden and we are going down to Skåne to see my parents and my siblings. Hopefully we can get some cycling in as well.

Quesadillas with a Spicy Guacamole

This is a super easy, super quick recipe for a delicious dinner. You can easily adapt this recipe, and if you want to make it even nicer, but less healthy, double the cheese so it oozes out when you eat it.

We were inspired by thinking about the Mexican food we ate in Korea two years ago, and found this Jamie Oliver recipe that we have adapted a little.

Cauliflower Pizza – Gluten Free

As some of you may have read, we were in England this past week and my sister Jasmine (of Shedding the Wheat) cannot eat gluten. When we were discussing what to have for dinner, we had all heard of cauliflower pizza and had wanted to try it, so that’s what we did!

It was incredibly simple to do, and didn’t take much longer than a regular pizza base (seeing as you need to leave the dough to rise normally). We decided to have roasted vegetables on our pizzas, and me and Sofi had cheese on ours, but my sister had hers without as she doesn’t eat dairy products. Continue reading

Our Weekend, Week 14 – Easter

So we arrived safely in England and have enjoyed our Easter weekend. 🙂

We arrived Friday evening, after a nice start to the day in Helsingborg, and ate dinner before going to bed – the hill repeats had really tired us out. On Saturday morning we were all planning on going for a ride (me, Sofi, my sister Jasmine, and my dad), but I was feeling a little bit unwell still, so opted to set up my pedals and stay at home instead while they went for a ride. (Sofi’s ride, my dad’s ride, Jasmine’s ride.)

After our ride, me, Sofi, and Jasmine went to Kingston for a bit of shopping and then went to see my grandpa (my mum’s dad), and we took him to Claremont. We had a nice walk and spotted a few different birds 🙂 In the evening we made cauliflower pizza. It was delicious and a recipe is coming soon 🙂

On Sunday we went for a ride together to Seale and back, although a different way there to last time, up a tough hill to give Jasmine a little challenge. She did very well, and it is nice to see her getting more confident on each ride. (My ride, Sofi’s ride, Jasmine’s ride, my dad’s ride.) After the ride we watched the Tour of Flanders on TV and had a family lunch/dinner for Easter and for Lesley’s (my dad’s girlfriend) birthday. It was a really nice afternoon catching up and enjoying the good food my dad had cooked.

On Monday, we went to Portsmouth with my mum and Jeremy (her husband) for some outlet shopping 😀 Sofi finally replaced the purse that she bought from the same shop last year but was subsequently stolen a few months later, so she was extremely happy! We ate lunch at Brasserie Blanc, which was absolutely delicious. After we were done shopping, we went home via Guildford to pick up a few other little things. In the evening we went out for Indian food with my mum, Jeremy, Jasmine, and Nick (my sister’s finacé). I think we might have eaten a little too much…but that’s ok every now and again 😉

Today me and Sofi went to London for the day. Being a history lover and seeing as she is teaching her students about WWI at the moment, Sofi wanted to go to the Imperial War Museum. I hadn’t been since I was a little boy, so it was really interesting to go again now (I think they’ve redone a lot inside since I last went as well). After the Imperial War Museum, we went to lunch at Sticks n Sushi, a Danish sushi restaurant that Sofi had been wanting to go to for a long time. The food was really good, and we would both recommend it. (Unlike me, Sofi actually ate some of the real sushi and she said it was the best sushi she had ever eaten!)

After lunch, we walked around London, stopping at the Rapha Cycle Club store to get Sofi’s cycling shorts, and we also had fika and caught the end of today’s stage from the Tour of the Basque Country. Sofi was in Rapha heaven, and I think we were lucky to escape without a million purchases. 😀 We then walked through Mayfair to Hyde Park, where we enjoyed the open space and soft grass underneath our feet before heading back to Waterloo to catch a train home.

Tomorrow we’re cycling to my friend in Basingstoke, about a 100 km round trip, and then we are planning on riding a few hills on Thursday and having a nice pub lunch out on our bikes. It’s then back to Sweden (to Helsingborg to stay at Lisa and Tommy’s again) on Friday (we might get a short ride in in the morning though 😉 ), and then we’ll head back to Gothenburg some time on Saturday afternoon. Holidays never seem to be too relaxed with us…but I guess we do call ourselves “active” beans!

We really will try to put some recipes up soon, but sometimes there is far too much going on! We hope you all had a nice Easter break, and got to enjoy the good weather (if you had some).
